Summer Fun - Popsicles

Popsicles! 
Puree fruit, I added agave to make them a bit sweeter and a touch of Orange Juice.

Eggs

Oh so many egg puns, I will spare you (I am not eggcited..)
Price of Eggs

2.49 a dozen.  2 years ago they were .89 at Aldis
They say the Avaian flu.  
I bake a lot, lots of eggs.
I do know of a Depression cake recipe that doesn't use eggs.  Makes a wonderfully moist Chocolate cake.
I know it as Wacky cake
  • 1 1/2 Cups flour (all-purpose)
  • 3 Tbsp. cocoa (unsweetened)
  • 1 Cup sugar
  • 1 tsp. baking soda
  • 1/2 tsp.  salt
  • 1 tsp. white vinegar
  • 1 tsp.  pure vanilla extract
  • 5 Tbsp. vegetable oil 
  • 1 Cup water 

Preheat oven to 350 degrees F.

Mix first 5 dry ingredients in a greased 8" square baking pan.  Make 3 depressions in dry ingredients - two small, one larger.
Pour vinegar in one depression, vanilla in the other and the vegetable oil in third larger depression.  Pour water over all.  Mix well until smooth.

Bake on middle rack of oven for 35 minutes.  Check with toothpick to make sure it comes out clean. Cool.  Top with your favorite frosting.  Enjoy!

Hobbies.

I have a few hobbies.
I even have one that can make me money sometimes.
I knit.  Nothing fancy.  Dishcloths and scarves.
I give them as gifts and sometimes even sell them at a craft show.
And always use a coupon to buy my yarn. I have even been given yarn.

Breakfast

My son is getting older.  He can make is own breakfast (Not that he wants to)
As you may know, I make a bunch of waffles or pancakes and freeze them.
I also make Egg, Cheese, English Muffin sandwiches.
Freeze, then just heat up in microwave for fast easy breakfast.
Individually wrapped egg, cheese, sausage breakfast sandwiches.

Library

You know I love my public library.
I can even read the latest magazines there.
You can't check them out so I snuggled into a Huge chair that felt like my own private cubby and read and relaxed for an hour.
Then checked out 2 books and 2 videos.
It was 2 for Tues.  2 videos for the price of one.
One video was a PBS series that had 3 DVDs in it. $1.59 for all.

2 for the price of one

Chicken.  Yes more chicken
1.66 a lb.  Not bad although I have done better. But it is already marinated.
I made these two HUGE breasts for dinner.  Lots of meat left over, so I made Chicken fried rice the next night
So, six meals for 4.10 of meat
.68 cents of meat per meal.

The mother inlaw just bought 2 things there and got 5.00 gift card that she gave to me (I was walking in as she was walking out)
Plus, I used an app called Shopkick that earned me 6.00 in gift cards.
